I love home cooked food. Here is one recipe that my husband and I have come to enjoy at least once a week. You can prepare it for breakfast, a snack, or for dessert (with ice cream on top, of course!). It is healthy for diabetics and non-diabetics alike. It makes diabetics and non-diabetics all smile!
Creamy Apple Quesadillas
Ingredients
- Cinnamon
- Sweetener (I use Splenda)
- Whole wheat tortilla
- 3 T low or no fat cream cheese
- 1 small apple, quartered and sliced into ¼ inch slices
- Cooking spray
Instructions
In a small bowl, mix sweetener and cinnamon to taste. I use as much cinnamon as my eating crew can stand because it is good for you.
In another small bowl, mix cream cheese, sweetener, and cinnamon to taste.
Spread the cream cheese mixture over the ½ of each tortilla. Place apple slices on cream cheese mixture. Fold tortilla closed. Spray one side with cooking spray, and then sprinkle cinnamon-sweetener mixture on the cooking spray. Repeat with the other side.
Heat 10-inch nonstick skillet over medium heat. Add quesadilla and cook 2 to 3 minutes on each side, until both sides are slightly brown and crisp.
Remove quesadilla from skillet to cutting board. Let stand for until cool.

This recipe is delicious and nutritious. My husband, who does not generally like healthy food but is diabetic, loves it. Your significant other and children are sure to love it, too!
