Today was a rainy day and my husband and I had fun in the kitchen. First he made dinner in the crockpot using some leftover chicken and some tomatoes frozen from last year’s garden, and then we made a cake called “Wacky Cake”. My husband had found this recipe on the internet and we did not have all of the ingredients so we made it using what we had. And it turned out delicious!
Looking at the recipe for this delicious dessert, I realized that it has no milk or eggs or nuts. So if you are vegan or have some food allergies, you will especially love this dessert.
The ingredients we used…
1 ½ cups all-purpose flour
1 cup sugar or artificial sweetener
¼ cup cocoa
½ teaspoon salt
1 teaspoon baking soda
1 tablespoon apple cider vinegar
1/3 cup vegetable oil
1 cup cold water (or almond milk)
How we made it…
I greased an 8 inch baking pan with Crisco. Then we measured the flour, sugar, cocoa, salt, and baking soda into the pan. I stirred these ingredients together until everything was well-mixed.
My husband scooped out three holes in the flour mixture. He poured the vinegar into the first hole, the vanilla into the second hole, and the oil into the third. Then I poured almond milk over the entire mixture and stirred it.
We baked it for 40 minutes at 350 degrees, let it cool, and then ate it with whipped cream on top. It was moist and delicious and we will make it many times in the future!
